Preparation:
We begin by preparing the base. Unroll the puff pastry and cut it in half. Prick one half with a fork, brush the other half with 1 beaten egg and cut it into 9 squares. Bake the puff pastry for 20 minutes at 180 °C. Meanwhile, mix the pudding powder with sugar, protein, 2 egg yolks, and milk. Cook, stirring constantly, until thickened. Whip the remaining egg whites until stiff with a pinch of salt and carefully fold them into the hot pudding.
Spread the pudding onto the baked puff pastry (the part you pricked with a fork) and let it cool for at least 1–2 hours in the refrigerator. Then, whip the cream until stiff, carefully fold in the quark, which can be sweetened with flavour drops as needed, and spread this cream over the pudding.

Then, place the puff pastry squares side by side on top. Finally, dust with powdered sugar and serve.
