We start by preparing the pasta, which we cook in salted water until al dente. Slice the onion into thin half-moons and in a large pan, let it slowly caramelise in oil. Stir occasionally and continue until soft and golden. This will take approximately 25 minutes.

Finally, season the onion with sugar and salt and sauté briefly. Add the pasta water and finely grated Parmesan to the onion and let it melt. Finally, add the pasta, season with ground pepper and salt, mix everything and remove from heat. Serve the pasta with warmed turkey meat shredded into pieces, fresh herbs, and sprinkled with Parmesan.
