These Air Fryer Roast Vegetables are simply delicious. They’re a healthy side dish option and a great way to make tender vegetables every single time!


Most air fryer vegetables recipes focus on veggies that my family really doesn’t enjoy. Adding the sweet potatoes is what sets this recipe apart for me! That little hint of natural sweetness kicks up the whole dish. Using your air fryer is an easy way to cook any type of vegetable.
You can easily whip up this during busy weeknights when you need the perfect side dish. I’ll pair it with some Air Fryer Sausage or Air Fryer Frozen Salmon. The variety in the air fryer roasted vegetables is great because it can easily serve as a vegetarian main dish, too.

Ingredients
- Brussels sprouts – You can add them whole or cut them in half.
- Sweet potato – Clean and peel the potato well and then cut it into chunks.
- Baby onions – You can also use a diced red onion or any size of onion that you want.
- Broccoli – I add broccoli stems and all into the air fryer.
- Carrots – Baby carrots or regular carrots that you’ve diced and cut up work fine.
- Olive oil – Avocado oil and coconut oil would work well, too.
- Lemon juice – This is for flavor. Lime juice could also work.
- Fresh rosemary – I love adding fresh rosemary as a seasoning.
- Garlic – Fresh garlic cloves roast up sweet and tender in the air fryer.
- Salt & black pepper – You can season to taste.

How to Make Air Fryer Roast Vegetables
Step One: Spray the air fryer basket with cooking spray. Add all the veggies that are prepped and ready into a large bowl.


Step Two: In a different small bowl, mix the lemon juice, oil, garlic, salt, pepper, and rosemary.


Step Three: Drizzle the mixture over the top of the vegetable and then toss to combine.


Step Four: Put the veggies into the air fryer basket and cook for 15 minutes at 375 degrees. Depending on how you prefer tender veggies, you can cook a bit longer.


Step Five: Serve and enjoy. For the best results, serve immediately.


Variations
- Add other vegetables – Air Fryer vegetable recipes are so versatile! You can easily add red bell peppers, yellow squash, mushrooms, asparagus, root vegetables, green beans, or any other type of vegetables that you want. Just cut firm vegetables into smaller pieces so they cook at the same time as less firm vegetables.
- Add unique seasonings – You can also toss vegetables in seasonings like other fresh herbs, dried Italian seasoning, garlic powder, smoked paprika, fresh parsley, and more. Have fun and mix up the taste of this delicious recipe.
- Toppings – Top the cooked vegetables with parmesan cheese or drizzle with a balsamic vinegar reduction.

How do I get soft vegetables in the air fryer?
The first time that you make this recipe, you may try to overcrowd it. Don’t! The best way to make this easy air fryer vegetables recipe is to add the veggies in a single layer so the hot air can hit all the sides. If they don’t fit you can either stir every few minutes or cook them in two batches.
Are air fryer recipe healthy?
Many are. You use way less oil than you would use frying them in other methods – and you don’t lose any of the taste. Plus, they take less time than cooking them in the oven, too! This is why air-frying veggies is my new favorite way to cook them!
Can I make this recipe in the oven?
Yep, you can. You can make oven-roasted vegetables with the same ingredients, but you will have to adjust the cooking time. More than likely, it would take at least double the amount of time, if not triple, to cook the fresh vegetables in the oven. Just keep an eye on them and use a fork to pierce them to test their doneness.
How do I store leftover cooked vegetables?
Once the veggies are cooked, you can easily store them for later. Just let the cooked veggies cool down to room temperature, and then add them to an airtight container. The leftovers do need to be kept in the fridge until you are ready to eat and reheat.
You can then reheat them back in the air fryer for a short amount of time or also use the microwave or oven as well. The air fryer is the best way to get that crispiness added back to the texture, but any heating method will work just fine.
