Well we LOVE a good aioli, our viral Harissa Aioli has been a crowd pleaser and such a hit! A good aioli is like the icing on the cake, especially when you dip or drizzle it on your meals.

While we serve this truffle aioli recipe with our Parmesan Truffle Fries for that absolute truffle flavor, you can serve it with any type of fries. We start with our Air Fryer Frozen French Fries or Air Fryer Sweet Potato Fries and season them however we feel like!

What is a Truffle Aioli?

Aioli is traditionally made of an emulsion of garlic and olive oil. However, modern and convenient ways involve simply flavoring ready made mayonnaise.

For the truffle aioli taste, you’ll simply add truffle flavor to your garlic mayo. Now you can absolutely use fresh truffles if you have access to them. This recipe uses quality truffle oil for an intense flavor and rich taste.

We always use a blend of light and dark truffle oil for the best of both worlds. However if you’re looking for a mild garlicky taste, light truffle oil is great on its own. For a deeper flavor, combine some dark oil.

When using these oils, always remember that less is more. They’re truly strong and flavorful enough so you don’t need to add much.

What Does Truffle Taste Like?

Truffle has an earthy flavor. You can add that flavor by using oil or fresh truffle. We tested different ways to make the truffle aroma shine. that included using mayo only, adding in yogurt or sour cream. Then we tested different types of truffle oils.

  • Truffle oil: white truffle oil is more floral, black truffle oil is earthier — both are often made with infused oil and should be used sparingly.
  • Fresh truffle: shave or grate over the finished aioli for maximum aromatic complexity. Also use sparingly.

  • Mayonnaise. Use quality mayonnaise and our tip is to add a few tablespoons of Greek Yogurt (or sour cream) to brighten the flavor. It also makes the aioli feel lighter.
  • Truffle Oil. Use light truffle for a beautiful subtle flavor, or a blend of light and dark for a richer taste.
  • Fresh Garlic. Fresh is best, however you can use garlic powder is it’s unavailable
  • Dijon Mustard. Adds flavor
  • Lemon. We use lemon juice for brightness
  • Seasoning. Salt and Black Pepper, and optional chilli flakes
  • Herbs. We use a blend of fresh thyme and parsley.
  • Sriracha. optional

How to Make Truffle Aioli

This is the easiest and most convenient way to make this recipe.

  1. In a small bowl, combine the mayonnaise and yogurt or sour cream.
  2. Add to that the garlic, herbs, dijon, lemon juice, salt and pepper.
  3. Finally add in the truffle oil.
  4. Mix well until smooth.

Truffle Aioli Recipe Tips

  1. Always use less when it comes to truffle oil. Truffle oils vary widely, and they’re mostly all highly concentrated.
  2. If using fresh truffles, grate them finely over the remaining ingredients, also using small amounts.
  3. Since this recipe relies on mayonnaise, choose high quality mayo for a creamy, clean tasting aioli.
  4. If making mayo from scratch, keep in mind raw eggs have a safety consideration, especially for pregnant women or immunocompromised people.
  5. It’s best to use fresh garlic for a richer flavor, and balance it with the lemon juice. The more lemon juice you add, the mellow the garlic flavor will taste.
  6. If you have time on hand, chill the aioli for 30 minutes or so at least before serving. This ensures the flavors blend well together.

Conveniently , yes. Making aioli is basically flavored mayonnaise, which you can make from scratch  or use a clean quality product that’s store bought. Both are delicious, the from scratch has a brighter garlic punch, while mayo is faster and more stable.
