Preparation:

Boil the whole potatoes in their skins until soft in salted water, drain and let them cool completely. Then peel and grate them. Blend the spinach with flour and add to the potatoes.

With your hands, work into a compact dough (if sticky, add more flour) and divide it into 4 parts. Roll each part into a log on a floured surface and cut into individual gnocchi. You can gently press them with a fork for a nicer texture. Then cook them in boiling water until they float. Remove them afterwards.

In a larger pan, heat oil and sauté finely chopped garlic, add the gnocchi, drained chicken, pepper and coarsely chopped herbs. Briefly sauté and serve sprinkled with grated parmesan.
